This is one of the simplest vegetable side dishes you will come across….and possibly the most flavorful.
3 Pints Cherry Tomatoes (or Grape Tomatoes)
½ Cup Olive Oil
1 Tsp. Salt & ½ Tsp. Pepper
4 Tbsp. Fresh Basil, Chopped
Place the tomatoes on a large baking sheet. Drizzle with the olive oil, salt and pepper and stir well, making sure that the tomatoes are all coated with the olive oil and seasoning. Place the tomatoes in a preheated 425 degree oven for approx. 10-12 minutes, until the tomato skins begin to burst. Remove from the oven, and place the roasted tomatoes on a serving dish. Top with the freshly chopped basil and serve warm.
