BAKED PARMESAN TOMATOES

I am always looking for different recipes to make in the summer, when tomatoes are plentiful.  This is easy to make, and the parmesan topping makes this a savory side dish.

 

Ingredients:

4 Tomatoes, Cut in Half (Horizontally)

¼ Cup Parmesan Cheese, Grated

¼ Cup Italian Seasoned Breadcrumbs

1 Tbsp. Fresh Oregano

1 Tsp. Salt & ½ Tsp. Pepper

2 Tbsp. Extra Virgin Olive Oil

 

Directions:

Place the tomatoes, cut side up, on a greased baking sheet.  Sprinkle the tomatoes with the parmesan cheese, breadcrumbs, fresh oregano, salt and pepper.  Drizzle with the olive oil, and bake in a preheated 450 degree oven for 12-15 minutes.  Serve warm.
