This recipe is easy and delicious.  I make this often in the summer, when zucchini are in season and plentiful.  This recipe is good using any vegetable – feel free to change based on your preference. 



4 Medium Zucchini

4 Tbsp. Butter

4 Tbsp. Extra Virgin Olive Oil

2 Large Onions, Sliced Thin

1 Tsp. Salt

1 Tsp. Pepper

½ Cup Parmesan Cheese, Grated



Remove the ends from the zucchini, cut in half lengthwise, and slice in ½” slices and set aside.  Meanwhile, add the butter and olive oil to the skillet, and heat until the butter has melted.  Add the onions, salt and pepper.  Cook stirring frequently, until the onions caramelize, approx. 20 minutes.  Add the zucchini to the onion mixture, and sauté for approx. 12 minutes, until zucchini is tender.  Sprinkle with the parmesan cheese and sauté for approx. 1 minute.  Serve warm.
