MEATLOAF WITH RICOTTA

I remember eating meatloaf often growing up.  We used to try different toppings, fillings, etc. to jazz up this dish.  This recipe is simple and delicious on its own, and definitely worth trying.

Ingredients:
2 lbs. Ground Chuck (85% Lean)
½ Cup Ricotta, Whole Milk
4 Eggs
½ Cup Pecorino Romano Cheese, Grated
1 ¾ Cups Seasoned Breadcrumbs
3 Tbsp. Garlic, Minced
¼ Cup Fresh Parsley, Minced
1 Tsp. Salt & 1 Tsp. Pepper
Marinara Sauce (Optional Topping)

Directions:
Combine all ingredients in a large mixing bowl.  Place the mixture on a well greased roasting pan, and shape into a loaf.  Cover the pan with foil and bake for approx. 45 minutes in a preheated 375 degree oven.  Remove the foil and let cook for 1 hour more, until the meatloaf is browned all over and completely cooked through.  If desired, serve the meatloaf with marinara sauce.  Serve warm.
