My Dad loves any type of sausage dish.  This is one of my favorites, because I love the flavors of the hot cherry peppers mixed with the roasted potatoes on top of the Luganega sausage.



2 Packages Luganega Sausage Roll (Sweet) & 3 Tbsp. Olive Oil

3 Large Yukon Potatoes, Chopped in 1” Cubes & 3 Tbsp. Olive Oil

Salt, Pepper & Dried Oregano to taste

½ Cup Hot Cherry Peppers, Sliced



Place the cubed potatoes on a large baking sheet, drizzled with olive oil, salt, pepper and oregano.  Place in a preheated 400 degree oven and roast for approx. 30 minutes, until tender and lightly browned.  When ready, remove from the oven and while warm, mix in the hot cherry peppers.  Meanwhile, place the Italian sausage on a baking pan and cover with 3 Tbsp. of olive oil.  Prick the sausage with a knife several times, and place in a preheated 350 degree oven for approx. 30 minutes until golden brown and cooked through.  Place the cooked sausage on a serving platter and top with the roasted potato and hot cherry pepper mixture.  Serve warm or at room temperature.
