Mom made this recipe often while we were growing up.  It is surprisingly delicious, and very easy to make.  The house will smell great while this is baking. 



2 ½ lb. Chicken, Cut into Pieces

½ Cup Flour

1 Tsp. Salt

1 Tsp. Paprika

¼ Tsp. Pepper

¼ Cup Butter & ¼ Cup Shortening



Mix flour, salt, paprika and pepper, and place mixture in a large Ziploc bag.  Add a few pieces of chicken at a time to the Ziploc bag, and shake well until coated.  Meanwhile, heat the butter and shortening on a 13x9 baking pan in a preheated 425 degree oven.  When the butter and shortening have melted, place the coated chicken on the hot baking pan, skin side down, and cook, uncovered for approx. 30 minutes (make sure the chicken is placed in a single layer with room).  Turn the chicken once, and cook, uncovered for an additional 30 minutes.  Serve warm.
