An old friend of mine used to make this family recipe for beef braciole spiedini, which was skewered and broiled.  This recipe has been adapted and modified…with the same delicious flavors and crispy texture. 



3 lbs. London Broil

3 Cups Seasoned Breadcrumbs

2 Cups Parmesan Cheese, Grated

1 Tsp. Garlic Powder

1 Tsp. Dried Oregano

½ Tsp. Salt & ½ Tsp. Pepper

Extra Virgin Olive Oil



Place the London broil in the freezer for about 1 hour before slicing.  This will allow you to slice the beef very thin.  When ready, slice thin, toss with 3 Tbsp. of extra virgin olive oil to moisten, and set aside.  In a mixing bowl, combine the seasoned breadcrumbs, parmesan cheese, garlic powder, dried oregano, salt, pepper, and approx. 4 Tbsp. of extra virgin olive oil.  Make sure mixture is moist (if not-add more olive oil).  Take a slice of beef, place breadcrumb mixture on top, and fold in the sides and roll.  Place on a metal skewer.  When all the beef is rolled, rub extra breadcrumb mixture on the outside of the meat, and drizzle with olive oil.  Place the skewered braciole on a large baking sheet and broil until brown and crisp on all sides (turn skewer while broiling to make sure all sides are evenly browned and cooked).  Serve warm with marinara sauce on the side if desired.
