There are some basic recipes/tricks to making sure your grilled foods taste great.  Seasoning your food well and then topping it with a rich lemon butter sauce is a good way to start!  Many of the recipes in this section were inspired by grilled food our family has enjoyed at Carrabba’s Restaurant.

Grill Seasoning:

½ Cup Kosher Salt

¼ Cup Black Pepper

2 Tbsp. Garlic Powder

2 Tbsp. Dried Oregano

1 Tbsp. Red Pepper Flakes

Lemon-Butter Sauce:

8 Tbsp. Butter

1 Minced Garlic Clove

2 Tbsp. Lemon Juice

¼ Cup Dry White Wine

1 Tsp. Salt

½ Tsp. Black Pepper

Grill Seasoning: Combine all ingredients and sprinkle liberally on meat, chicken or seafood.  Keep extra seasoning mix in an air-tight container.  Lemon-Butter Sauce: In a large sauté pan, melt the butter.  Add the garlic clove and sauté for approx. 1 minute.  Add the lemon juice, white wine, salt and pepper.  Saute for approx. 3-4 minutes, until the liquid reduces slightly.  Remove from the heat and use as needed.
